Bakemono began on Drewery Lane in 2019 — a baker's answer to the question our neighbours at Little Rogue kept hearing: what should I eat with this coffee?

What started as a few pastries for the regulars has grown slowly, by word of mouth. French technique, read through a Japanese and Korean lens. Three-day croissants. Shiopan out around 11:30. A melon pan we're quite fond of.

Almond & Yuzu Croissant

Twice-baked, filled with a bright yuzu custard. Laminated in Isigny Sainte-Mère butter and finished with toasted almond.

The Three-Day Croissant

Slow-laminated over three days in Isigny Sainte-Mère butter. Shatter-crisp outside, honeycomb within. The one we keep coming back to.

Canelé

Dark, lacquered, custard-soft inside. Rum & vanilla, matcha, or earl grey — made in small batches and gone by midday.

Castella & Financiers

A quieter corner of the counter. Honey-soft castella and brown-butter financiers — pistachio, pine nut, dark chocolate.

Hinoki castella and financier, wrapped by hand in paper and cord. Made to carry through the laneway and share later.

Specialty coffee on Core Coffee Roasters beans. Iced hojicha with soy, matcha latte, yuzu iced tea, Mörk drinking chocolate.

Sweet, salty, sea-salt finish. Made in small batches.

Shiopan

Japanese salt bread — soft, pillowy. Arrives 11:30.

Melon Pan

Crackled sugar top, soft middle. From 11:00.

Blueberry Danish

Mascarpone custard, crumble, blueberries.

Garlic Butter Shokupan

Korean-style, on milk-bread dough. Often the first to go.

The Space

Bakemono lives in a converted garage on Drewery Lane, just off Little Lonsdale Street. The renovation honours the site's original bones — roller shutters, exposed concrete, high ceilings — rebuilt in reclaimed timber and Corten steel.

Our display cases are dark timber, backlit, drawn from the medicinal cabinets of My Neighbour Totoro. Each pastry sits in its own square of light.
